Gmail will present suggested times, or you can choose a custom date and time for the email to be sent.

Once scheduled, your email will move to the Scheduled folder, where you can view, edit, or cancel it before it’s sent. You’ll also receive a confirmation notification when the email is successfully sent at the scheduled time.
